Banh Mi Cheeseburger

Based on the Vietnamese street food found on street corners all over the country, where each region and each vendor has their own take. But the banh mi is always fresh, crunchy and most importantly delicious.

For ours we opted for pork belly marinated in Chinese red pork seasoning before being boiled, sliced and finished in the deep fryer. Served with our aged beef patties and American cheese (as per), crunchy cucumber, Vietnamese pickled daikon & carrot, sliced chillies, coriander, Maggi seasoning, mayonnaise and chicken liver pâté.

We did a 7-day brine on some Aubrey Allen briskets to make our own salt beef for this. A partial nod to a New York style Reuben, but also drawing influence from the mighty Brick Lane Beigel Bake, who serve their salt beef bagels with pickles and a tonne of mustard.

Birria Burger

Minerva Cafe × Zephyr Burgers: Cheeseburger

A collaboration of ingredients and styles from both our menus, with a burger at Zephyr and a taco at Minerva, plus an exclusive t-shirt for the real headz (available at both locations).

Adding Minerva's kimchi to a burger was a no-brainer and it works so well with the beef. Sticking to an Asian theme, we infused oil with kaffir lime leaves for a mayo with a slight sweet lick of citrus, then added sliced jalapeños for heat and a sprinkle of chicharrón (puffed fried pork skin). Honestly my favourite burger to date!

Minerva Cafe × Zephyr Burgers: Taco

For the taco we coated beef cheek in a dry rub of toasted juniper berries, coriander seeds and a few other spices, then braised it in Coca-Cola until it fell apart. Taking inspo from taquerias in Mexico, we fried our imported corn tortillas in a little butter, then built it with Zephyr sweet lime & coriander slaw, the cola-braised beef cheek, our cheese sauce, pickled habaneros, chicharrón and chives.

Zephyr × Meat Box BBQ

Celebrating National Burger Day with a meaty collab with the supreme Meat Box BBQ: proper Texas-style smoked brisket on top of our aged beef patties with American cheese, Meat Box's Pilgrimage BBQ sauce, pink onion, pickled jalapeños and Bone Marrownaise. Available for one day only, this was one hell of a burger!

Working towards the ultimate Sloppy Joe, we used our aged beef burger blend to make a chilli con carne that absolutely bangs, spooned onto a cheese-topped patty with jalapeños for extra heat and a little Bone Marrownaise just because… why not!? When we announced it on Instagram, someone suggested we call it Sloppenheimer. Done!

Knead × Zephyr: Pizza Cheeseburger

A collaboration with Knead Pizza to create two dishes, one at each restaurant: a cheeseburger that tastes like a pizza, and a pizza that oozes cheeseburger flavour. For the burger we wanted all the hallmarks of a classic pepperoni, so used a mix of American and Hungarian varieties, added nduja for heat and hot honey to elevate. Fior di latte is sprinkled onto the freshly smashed patty and flipped so it melts into the beef, and the bun is sauced with garlic aioli and Knead's San Marzano tomato sauce.

Knead × Zephyr: Cheeseburger Pizza

For the pizza we took the toppings from our most popular burger, the California. Using our dry-aged beef blend we made little pieces of beefy goodness cooked in a cast iron pan in the pizza oven for a wood-fired flavour. The result tastes just like a California, with Knead's pizza sauce and fior di latte.

Al Pastor Burger

All about capturing the flavours of this late-night staple of Mexico City. Traditionally cooked on a vertical spit and shaved into warm tortillas, we recreated the style by finely slicing and marinating pork leg, served with classic house-made taco accompaniments.

Currywurst Burger

5–8 October 2022

When Roam, our local brewery, sent us a keg of their Oktoberfest beer instead of our usual lager, we ran a special alongside it. Turns out Oktoberfest actually ends on 1 October. Who knew? With our own currywurst sauce and bratwurst cooked in bacon fat, it tasted so much better than we ever expected.

Ribwich Cheeseburger

The week after opening the restaurant was National Burger Day, so a special was essential. Taking inspo from a limited edition item at a certain fast food chain, we slow cooked primo pork ribs for 15 hours, pulled the meat and mixed it with a house-made bourbon BBQ sauce. A very special special indeed.

Big in Brazil

In 2020 a Brazilian follower told us a burger shop in São Paulo had ripped off our name, brand and even our photos. Powerless to do anything substantial, we did a Brazilian-inspired burger instead: picanha cuts on a rotisserie spit, smoked over cherrywood and sliced onto our signature aged beef patties, with a pineapple, coriander & lime salsa and avocado sauce.

Burns Burger

My grandad shares a birthday with Robbie Burns, so the haggis, neeps and tatties Burns Night feast is no stranger in my family. We went a bit further than a slice of haggis: sliced turnips pickled in a sweet whisky & vinegar brine, and a Laphroaig and orange zest mayo, for a tasty ode to Scotland in a bun.

Bloodsucking Zombie Apocalypse Burger

Halloween 2020–2022

Launched in 2020 as a two-day Halloween special. Inspired by the classic combo of peanut butter and jam, designed for older tastebuds with a kick from chilli jam and sliced jalapeños. For 2022 we added pickle slime, made by adding gelatin to our house pickle brine.

Credit to Marios, our fry chef, for this one. He'd been talking about a wasabi burger for a while, so we rolled with it and added pickled ginger and Kewpie mayo for an absolute belter. On for one day only for National Burger Day 2021. Should we bring it back?

Son of a Gun

Created for Bun Dance, Street Feast's National Burger Day 2019 event at Hawker House, to get classic steakhouse flavours into a burger. We worked with Nathan Mills at The Butchery in Bermondsey, who hung Dexter beef in his dry-ageing room for 78 days, and aimed for a steak-like crust with a medium-rare middle.
