A collaboration of ingredients and styles from both our menus with a burger at Zephyr and a taco at Minerva. Theres also an exclusive t-shirt for the real headz! (Available at both locations)

 

Adding Minervas Kimchi to a burger was a no brainer and it works so well with the beef! Sticking to an Asian theme we infused oil with Kafir lime leaves to create a lovely mayo with a slight sweet lick of citrus. Thinking about texture and heat we added some of our sliced Jalapeños and to finish a sprinkle of Chicharron (puffed out fried pork skin) and it was done - and honestly is my favourite burger to date! No sh*t!

For the Taco we took beef cheek and coated it in a dry rub made from toasted juniper berries, coriander seeds and a few other spices before braising it in Coca-Cola to the point where it just falls apart. Some of the taquerias in Mexico fry off their tortillas for tacos in a little butter - so we took inspo from the pros and did exactly that with our imported corn tortillas. Building the taco its Zephyr sweet lime & coriander slaw, cola braised beef cheek, our cheese sauce, pickled habaneros, chicharron & chives

Celebrating National Burger Day with this meaty collab with the supreme Meat Box BBQ! Proper Texas Style Smoked Brisket served on top of our Aged Beef Patties with American cheese, Meat Box's Pilgimage BBQ Sauce, Pink Onion, Pickled Jalapeños & Bone Marrownaise. Available for one day only this was one hellova burger!

Working towards creating the ultimate Sloppy Joe we used our aged beef burger blend to make a chilli con carne that absolutely bangs! Spooned on to a cheese topped patty we added jalapeños for extra heat and some texture with a little spread of bone marrownaise just because... why not!? The icing on the cake came when we announced this on instagram and someone suggested that we should call it Sloppenheimer. Done!

PIZZA CHEESEBURGER

A collaboration with Knead Pizza to create two dishes, one at each restaurant: First a cheeseburger that tastes like a pizza and then a pizza that oozes with cheeseburger flavours. For the burger we wanted it to have all the hallmarks of a classic pepperoni so used a mix of American and Hungarian varieties, added some Nduja for heat and some hot honey to elevate. Fior Di Latte cheese is sprinkled onto the freshly smashed patty and then flipped so it melts nicely into the beef. The bun is sauced with garlic aioli and Kneads San Marzano tomato sauce

And for the pizza we took the toppings from our most popular burger, the California and played around to make them work on a pizza. Using our dry aged beef burger blend we created little pieces of beefy goodness and cooked them in a cast iron pan in the Pizza oven to give them a wood fired flavour. The result is pizza that tastes just like a California but with the added flavour of Kneads pizza sauce and fior di latte cheese.

This one is all about capturing the flavours of this late night staple of Mexico City. Traditionally cooked on vertical spit and shaved off into warmed tortillas, we’ve recreated the style by finely slicing and marinating pork leg. Serving with some classic house made taco accompaniments.

As is traditional in the UK we always end up eating the same meal each and every Christmas! So we're on a mission to create a different festive special every year. We're not sure how this is gonna work in 10 years time but for now we've got ideas. After a (non-related) conversation about porchetta we had the idea to try some in a burger and you know what - it really works!

CURRYWURST

5th-8th October 2022

When Roam our local brewery said they were sending us a keg of their Oktoberfest beer instead of our usual lager we thought it would be a good idea to run a special alongside it. Turns out Oktoberfest is actually the end of September and ends on the 1st October. Who knew? Making our own Currywurst sauce and cooking the bratwurst in bacon fat this special ended up tasting so much better than we ever would have thought.

RIBWICH CHEESEBURGER

The week after opening the restaurant was National Burger Day so it was essential that we got a special on the go. Taking inspo from a limited edition menu item from a certain fast food chain we created the Ribwich Cheeseburger. Taking primo pork ribs and slow cooking for 15 hours before pulling the meat apart and mixing with a house made bourbon BBQ sauce this was a very special special indeed.

BIG IN BRAZIL

March 4 & 5th 2022

In 2020 we were alerted by one of our Brazilian followers that a burger shop in Sao Paulo had ripped off our name, brand and even used our photos. Powerless to do anything substantial we thought we'd do a burger inspired by Brazilian food. Talking many cuts of Pichana we prepared onto a  rotisserie spit and smoked them over cherrywood before slicing onto our signature aged beef patties. Served with a pineapple, coriander & lime salsa and avocado sauce.

burns burger

Given my Grandad shares a birthday with Robbie Burns; the haggis, neeps and tatties Burns night feast is no stranger in my family. I'd been wanting to do a haggis burger for a while and although just putting a slice of this dish of sheep stomach and lamb lung into a burger would have been great in itself - but we're Zephyr Burgers so we took sliced turnips and pickled them in a sweet whiskey & vinegar brine, created a mayo with Laphroaig and orange zest to assemble this tasty ode to Scotland in a bun.

Getting inventive here we created the North Pole Burger Co for this concept, set up an instagram account and built a website with a story that we'd been working with Santa himself and his elves to make the most Christmassy of burgers.

BLOODSUCKING ZOMBIE APOCALYPSE BURGER

Halloween 2020-2022

Starting in 2020 we launched this burger as the Halloween special for two days. Inspired by the classic combo of peanut butter and jam this was designed for older tastebuds with a kick from chilli jam and sliced jalapenos. For 2022 we added the Pickle Slime which was created by adding gelatin to our house pickle brine.

Credit to Marios our fry chef for this one. He'd been talking about a wasabi burger for a while so we rolled with it, added some pickled ginger and Kewpie mayo for an absolute belter of a burger. It was on for National Burger Day 2021 for just one day. Should we bring it back?

Having not long started up in Plymouth we were far less busy in service so it was possible to run a more complex burger. This had a Pork, Turkey, Sage & Onion Stuffing Smash Patty alongside the beef, slices of brie and American cheese.

Created for The 2019 National Burger Day event Bun Dance hosted by Street Feast at Hawker House. The idea was to get classic steakhouse flavours into a burger. We worked with Nathan Mills at The Butchery in Bermondsey and set aside some Dexter beef which hung in his dry aging room for 78 days. Like a good steak we wanted to achieve a steak like crust with a medium rare inner on the patty.
